Claret Cup Concentrate

A sweet red-wine and lemon concentrate to dilute with cold water and serve over ice.

Steps

  1. Step 1

    Gather the ingredients: 500 ml good red wine; 500 ml water; 5 lemons, juiced; 500 g white sugar; Cold water and ice, for serving.

  2. Step 2

    Boil the measured water and sugar for 5 minutes.

  3. Step 3

    Remove from the heat, add the lemon juice and red wine, then strain through a clean fine cloth.

  4. Step 4

    Return to the heat and simmer gently for 25 minutes. Let cool promptly, transfer to clean covered containers and refrigerate.

  5. Step 5

    To serve, pour a small portion into a glass and dilute with cold water to taste, starting with equal volumes of concentrate and water. Add ice.

  6. Step 6

    Keep at 4°C or colder and use within 2 to 3 days, or freeze in portions with room for expansion. This is a cooked wine drink and is not alcohol-free.
