Noodles with Brown Butter

Homemade egg noodles tossed with browned butter.

Method

Steps

  1. Step 1

Sift one pound of flour onto a clean work surface and make a well. Add five whole eggs, two tablespoons of cold milk and two saltspoons of salt. Knead carefully and briskly to a firm dough. Do not taste the raw dough.

  2. Step 2

Shape into a ball, flatten into a cake and rest for ten minutes. Roll to half an inch thick and rest for five minutes, then roll as thin as a sheet of paper and rest for another five minutes.

  3. Step 3

Cut the dough into two equal parts. Roll each into a straight-ended cylinder without tapering and slice very thinly. Unroll the noodles and spread on clean food-safe paper to dry for fifteen minutes.

  4. Step 4

Bring two quarts of water to a boil with the separate teaspoon of salt. Add all the noodles from the prepared batch and boil for about thirty-five minutes, until thoroughly cooked and tender. Drain in a sieve and place on a hot dish. Mix gently with the separate half teaspoon of salt and two saltspoons of white pepper.

  5. Step 5

Put one ounce of butter in a frying pan and toss over the heat until browned and nutty, without burning. Pour over the noodles and serve promptly.
