German Apple Pie

German Apple Pie Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-2579. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use chilled butter and refrigerated pastry rests, keeping both butter charges separate. Allocate only 113 g finished paste as one base. Use two pasteurized whole eggs for the custard and verify 74°C; no fixed plate dimensions or guaranteed fill are inferred. Limites : Plate dimensions, actual 113 g coverage, trimmed apples, custard fill and final yield remain unmeasured. No additional pastry or reduced fruit amount is prescribed.
