Golden Fried Apples

Half-inch apple rounds lightly milk-dipped, floured and butter-fried until golden.

    Slice the peeled and cored apples into approximately 1.3 cm thick rings. Dip each ring briefly in cold milk, then coat lightly with flour, shaking off loose flour.

    Melt the measured butter in a wide frying pan over brisk heat. Fry the apple rings without crowding for about two minutes on each side, using the book’s time as a guide; cook until both faces are golden and the apple is tender. Repeat in batches if needed.

  3. Step 3

    Lift with a skimmer and drain briefly. Arrange on a clean warm plate, dust lightly with powdered sugar and serve promptly.
