Cold Chicken with Green Tuna Sauce
Skinless poached chicken pieces dressed in olive oil and covered with a green tuna, anchovy, caper and parsley sauce.

Step 1
Gather the ingredients: 1 professionally dressed young chicken body, about 600 g, with the internal organs, neck and feet removed; Water for poaching; A little salt and black pepper; 6 tablespoons olive oil: 2 for the chicken and 4 for the sauce; 50 g tuna preserved in olive oil, drained; 30 g vinegar-packed capers, squeezed dry; 3 salt-packed anchovies, rinsed, filleted and boned; 1 handful parsley leaves, about 20 g, enough to make the sauce green; ½ tablespoon wine vinegar.
Step 2
Bring enough water to cover the dressed chicken to a boil. Lower the chicken into it and simmer gently until cooked, starting to check at about 30 minutes and continuing as needed until the thickest meat reaches at least 82°C. Time alone is not a safety check. Remove, let it become just cool enough to handle with clean utensils, then remove the skin and all bones and cut the meat into pieces.
Step 3
Season the chicken lightly with salt and pepper and toss with the first 2 tablespoons olive oil. Spread in a shallow container and refrigerate promptly, within 2 hours, at 4°C or colder for about 3–4 hours until cold. Keep it in the refrigerator throughout this resting period.
Step 4
Mince the parsley finely. Pound it with the tuna, squeezed capers and cleaned boneless anchovies to a very fine green paste. Transfer to a bowl and thin with the remaining 4 tablespoons olive oil and half a tablespoon wine vinegar. Toss the cold chicken with half the sauce and spoon the other half over the top.
Step 5
Keep refrigerated until serving as six small starter portions. Eat within 2–3 days of cooking, keeping the dish at 4°C or colder; discard if left out more than 2 hours. For the optional egg border, boil 2 eggs for about 10–12 minutes until whites and yolks are firm, cool promptly in cold water, peel with clean hands and cut into wedges. Arrange these around the chicken just before serving.
