Salmon Noodle Soup with Cucumber

Salmon and cucumber simmer with carrot, onion and sake. Cooked noodles and sesame oil are added before a brief rest.

  1. Step 1

    Weigh noodles dry and cook in 1000 ml boiling water for their package time, then drain. Thinly slice carrot, cucumber and onion. Weigh the sake. Cut raw boneless salmon into 3 cm pieces on a separate board; clean hands and utensils.

  2. Step 2

    Heat olive oil in a 4 litre saucepan over medium heat. Cook onion and carrot for 5 minutes. Add sake and simmer for 2 minutes, then add remaining 1600 ml water and simmer for 10 minutes until carrot is nearly tender.

  3. Step 3

    Add cucumber and salmon and simmer gently for about 6–10 minutes until salmon reaches 70°C internally on a clean digital thermometer. Add noodles and sesame oil for 1 minute, rest off heat for 4 minutes and serve eight starter bowls.
