Folded Prosciutto Frittata
Thin pieces of fatty prosciutto cooked in butter and enclosed in a frittata folded in half.

Step 1
Gather the ingredients: 3 eggs; 50 g thinly sliced prosciutto containing both fat and lean; 20 g butter, divided into two 10 g portions; Very little salt, only if needed.
Step 2
Cut the thin prosciutto slices into pieces roughly the size of a small coin, about 2 cm across. Stir the eggs briefly with a fork just until combined, adding very little salt if any because the prosciutto is salty.
Step 3
Melt the first 10 g butter in a nonstick frying pan over moderate heat. Add the prosciutto pieces and fry gently for a short time until they begin to sizzle and the fat softens.
Step 4
Pour in the eggs. When the frittata begins to set, fold it in half with a broad spatula to make a half-moon. Add the remaining 10 g butter around it.
Step 5
Lower the heat and finish cooking gently, turning carefully if needed, until the folded centre is fully set with no liquid egg and reaches 74°C. Slide onto a plate and serve promptly.
