Frog Risotto

Rice cooked in a strained frog and vegetable sauce with boneless leg meat, butter and Parmesan.

  1. Step 1

    Gather the ingredients: 12 large food-grade frogs, supplied already skinned, gutted and cleaned with bodies and legs retained; 300 g risotto rice; Quarter of a large onion; 1 garlic clove; 1 small carrot; 1 celery stalk; 1 tablespoon chopped parsley; A few basil leaves; 3 tablespoons olive oil; 2 ripe tomatoes, chopped; About 1.25 litres hot water, with extra if needed; 25 g butter; 40 g grated Parmesan; Salt and black pepper to taste.

  2. Step 2

    Order professionally cleaned edible frogs specifically sold for food by a reputable regulated supplier. Keep below 4°C and thaw frozen portions in the refrigerator. Separate the legs from the body portions and keep the legs refrigerated while making the sauce. Do not use unidentified wild amphibians or add frog eggs.

  3. Step 3

    Finely chop the onion, garlic, carrot, celery, parsley and basil. Cook in the olive oil with salt and pepper until beginning to colour. Add the body portions and cook, turning, until lightly browned.

  4. Step 4

    Add the chopped tomatoes and cook until they collapse. Add the hot water and simmer gently until the body meat is thoroughly cooked to at least 74°C and falling apart, about 35–45 minutes. Press everything through a fine sieve, retaining the sauce and discarding all bones and fragments; filter again if any grit remains. Do not blend bones into the sauce.

  5. Step 5

    Cook the reserved legs in a little of this strained sauce until the thickest meat reaches at least 74°C, about 8–12 minutes depending on size. Remove every bone and return the boneless meat and its cooking liquid to the rest of the sauce. Keep the sauce hot.

  6. Step 6

    In another pan, stir the dry rice in the butter until coated. Add the hot frog sauce a ladleful at a time and cook, stirring regularly, until the rice is just tender, usually 16–20 minutes. Add hot water if needed for even cooking. Stir in Parmesan just before removing from the heat and serve fairly dry but moist.
