Rice and Tofu Toast Bites
Cooked white fish and warmed firm tofu are folded through rice with spring onion, mint and herbs. Serve the mixture on small crisp toasts.

Step 1
Weigh the rice dry, rinse and simmer in the measured 1500 ml boiling water for the full packet time until tender. Drain well and fluff. Drain firm tofu and cut into small cubes.
Step 2
Use raw boneless white-fish fillets, such as cod, and check for bones. Cut into 2 cm pieces. Heat the olive oil in a wide pan over medium heat and cook the fish for about 6–8 minutes, turning gently, until a clean thermometer reads 70°C in the thickest pieces.
Step 3
Add the tofu to the pan and stir gently for 2–3 minutes to heat through. Fold the fish and tofu into the rice. Wash and finely slice the spring onion, chop the mint and herbs, then fold them in.
Step 4
Cut the toast into small squares and crisp in a dry pan over medium heat for 1–2 minutes per side. Spoon the topping onto the bases immediately before serving, divided into eight portions.
