Pompano Villeroi

Pompano fillets coated in ham-and-tongue Villeroi sauce, crumbed and pan-fried. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-1459. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Make No1460 sauce once as same-batch component, using correctly identified fully cooked ham/tongue and validated egg-yolk-safe process. Fillet purchased fish with appropriate bone checks; verify fish 70°C after crumb coating. Historical folded napkin service may be replaced with clean food-safe plate as explicitly marked plating adaptation. Limites : Fillet yield and count, sauce coating amount and adhesion, yolk safety, fish endpoint, breadcrumb mass and pan fit unknown.
