Steps

  1. Step 1

    Prepare No52 ONCE: Put the cut beef and all measured vegetables, herbs and seasonings in a clean large saucepan. Add enough cold water to nearly cover the solids and leave to infuse for the printed one hour, keeping this raw-meat mixture refrigerated rather than on an unrefrigerated range.

  2. Step 2

    Prepare No52 ONCE: Bring the mixture to heat, stirring gently for the printed five minutes. Pour in the measured boiling water, bring back to a boil, cover and lower to a gentle simmer.

  3. Step 3

    Prepare No52 ONCE: Simmer for the printed one and a half hours. Strain through a clean fine sieve and cloth into a clean vessel. Reserve the strained actual broth output for the turnips; do not serve separately.

  4. Step 4

    Hold the already prepared and strained measured No52 broth safely hot; its cup-service ending was replaced by holding the measured broth safely hot in a saucepan.

  5. Step 5

    Scoop all possible balls from three peeled turnips with small Parisian scoop. Add salt, sugar, butter and one gill water; cover with lightly buttered paper and lid, braise in oven source fifty-five-minute guide.

  6. Step 6

    Remove paper, add all turnips and recovered braising liquid to measured No52 consommé and boil source ten further minutes. Measure actual output, serve from tureen.
