Courgette and Tomato Salad with Balsamic Vinegar
Thinly sliced courgette and fennel join tomato and rocket in a parsley, oregano and balsamic vinaigrette. A teaspoon of the measured olive oil is reserved for the final drizzle.

Step 1
Wash and dry courgette, tomato, fennel, parsley and rocket. Thinly slice courgette and fennel, dice tomato and chop parsley.
Step 2
Reserve 1 teaspoon from the measured olive oil. Whisk remaining oil with both vinegars, dried oregano and parsley. Toss all vegetables and rocket with half the dressing, then add the rest to coat.
Step 3
Arrange six side portions and drizzle with the reserved teaspoon of oil before serving.
