Blanched Heart Sweetbreads for Immediate Cooking
Calf heart sweetbreads soaked in cold water and briefly blanched, then drained for immediate use in a dish that cooks them fully. This intermediate preparation must not be served after blanching alone.
Method
Steps
Step 1
Clean and neatly trim three pairs of raw calf heart sweetbreads. Place in a clean covered food-safe container with cold water sufficient to cover. Soak for two hours in the refrigerator at 4°C or below, changing the water three times with clean cold water. Keep separate from foods that will be eaten without further cooking and clean utensils and surfaces after handling.
Step 2
Have the next dish’s cooking setup ready before blanching. Bring a separate pot of fresh water sufficient to immerse the sweetbreads to a boil and add one teaspoon salt. Drain the soaked sweetbreads, lower them into the boiling water and blanch for five minutes.
Step 3
Remove and drain thoroughly, then cover briefly with a clean food-contact napkin. Transfer immediately into the prepared next dish and continue its full cooking without interruption. Do not serve after this blanch or refrigerate the partially cooked sweetbreads for later finishing.
