Bean Polenta

A hot coarse white-bean purée with browned onion, mustard, lemon, vinegar and molasses, served beside roast pork if desired.

  1. Step 1

    Soak sorted white beans if their variety benefits from soaking; drain. Simmer in fresh water until very soft, about 60–120 minutes depending on bean age, replenishing water as needed. Drain well and press through a coarse colander into a thick connected purée.

  2. Step 2

    Brown finely chopped onion in butter and fold into the coarse bean purée. Season with salt and pepper.

  3. Step 3

    Stir in vinegar, prepared mustard, proposed lemon juice and molasses; heat gently until thoroughly hot. Adjust acidity after tasting and serve the bean purée with pork roast separately if desired.
