Toasted Bread Canapés for Game

Two thick trimmed bread canapés hollowed to seat roasted game birds and browned with a little butter. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-0098. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use a clean food-safe baking sheet rather than an unspecified tin plate. Keep the centre cavity large enough to support the intended bird only after its actual size is known. Watch browning instead of inventing a time or thermostat setting. Limites : Bread size, trimmed loss, carved cavity, butter uptake and browning time vary. The completed canapé is a support for No. 97, not an invented independent meal. A dedicated photo waits for the roast-game service scale. No physical baking or tasting is claimed.

Method

Steps

  1. Step 1

Cut two approximately 3.8 cm thick bread pieces from a stale loaf and trim away the crusts. Cut a lengthwise recess in the centre of each, proportioned to support the intended game bird; the source gives no cavity measurements.

  2. Step 2

Spread a very little butter over the bread, without assigning an unprinted weight. Arrange the pieces on a clean food-safe baking sheet.

  3. Step 3

Brown in a preheated hot oven, watching until golden. Remove and place on a clean warm dish ready to hold the roasted birds of No. 97.
