Steps

  1. Step 1

Prepare FULL No 52 ONCE. Mix 907 g cut-up raw beef shin with ONE sliced carrot, ONE sliced turnip, ONE sliced onion, ONE chopped parsley branch, ONE chopped garlic clove, ONE chopped celery branch, ONE chopped chervil branch, ONE chopped leek branch, ONE tablespoon salt, TEN whole black peppercorns, ONE clove, FIVE whole allspice berries, ONE bay sprig and the source saltspoon thyme represented by 0.25 teaspoon. Select NO optional chicken/beef trimmings or bones. Add only enough cold water to nearly cover, amount unspecified, and infuse ONE hour refrigerated.

  2. Step 2

Stir the No 52 mixture over heat FIVE minutes. Add the SEPARATE 2370 mL boiling water, return to the boil, cover and simmer NINETY minutes. Cloth-strain all original solids OUT into another saucepan and keep the actual ENTIRE finished batch simmering; its finished volume is unknown.

  3. Step 3

Cut TWO carrots, ONE white turnip and ONE QUARTER of a very small cabbage into strips about ONE inch long and HALF an inch thick. Toss with ONE teaspoon salt and HALF teaspoon sugar for the EIGHT-minute guide.

  4. Step 4

Put these vegetables in a saucepan with 14 g butter and 118 mL actual FINISHED No 52 from the SINGLE prepared batch. Cover and oven-cook for the ONE-hour guide. Keep the REMAINING actual No 52 broth separately; no finished volume is assumed.

  5. Step 5

Return ALL vegetables AND their cooking liquor to that SAME remaining No 52 broth. Add THREE tablespoons already COOKED green peas and boil FIVE minutes.

  6. Step 6

Put SIX thin French-bread toast slices and ONE teaspoon chopped chives in a tureen. Pour the soup OVER them and serve. No second parent batch or extra purchased 118 mL broth is added.

  7. Step 7

Optional chicken or beef bones/parings are omitted in this documented preparation.
