Whole Sausages with Grapes

Whole sausages cooked in a little butter before a modest quantity of whole grapes is added and softened into their juices.

  1. Step 1

    Gather the ingredients: 3 fresh pork sausage links, about 300 g total; 15 g butter; fresh plain lard is an alternative; 100 g fresh grapes, washed and removed from their stems, preferably seedless.

  2. Step 2

    Prick the sausage casings lightly with the tip of a fork, keeping the links whole. Put in a frying pan with the butter and cook over moderate-low heat, turning, until fully cooked to 74°C, about 15–20 minutes depending on thickness. Fresh plain lard can replace the butter.

  3. Step 3

    Only after the sausages are cooked, add the modest quantity of grapes as WHOLE berries. Simmer gently in the pan juices for about 8–12 minutes until the grapes have partly collapsed and released their sweet-sour juice, while some retain their shape. Serve the sausages hot with these grapes and juices.

  4. Step 4

    For the source’s plain pan-cooked sausage alternative, use the same whole links without grapes or butter. Put them in a small pan with about 2 tablespoons water, cover and cook gently, turning and adding a small splash of water only if needed, until cooked through to 74°C. The source also mentions grilling whole sausages: turn them over moderate heat until the same measured endpoint is reached.
