Broiled Fresh Mushrooms on Toast

Broiled fresh mushroom caps with lemon, oil and butter on six pieces of toast.

Method

Steps

  1. Step 1

Start with one pound medium fresh cultivated white button mushrooms. Separate the stalks from the caps and reserve the stalks for another preparation. Use all the caps for this dish; peel, wash and drain them carefully, then put in a bowl.

  2. Step 2

Add the one tablespoon olive oil, strained juice from the half lemon, one light teaspoon salt and half a light teaspoon finely ground white pepper. Turn the caps repeatedly to coat them evenly in the seasoning.

  3. Step 3

Arrange the seasoned caps in a clean double broiler basket and broil for five minutes on each side as a guide, until tender and cooked through. While they cook, toast the six slices bread until lightly crisp on both sides, making six fresh dry toasts.

  4. Step 4

Arrange the six toasts on a hot dish and divide all the hot mushroom caps evenly over them. Spread a little butter over the mushrooms and serve immediately.
