Tomato and Courgette Salad with Feta
Tomato, thinly sliced courgette, feta and rocket are coated with sesame and olive oil vinaigrette, with lemon wedges alongside.

Step 1
Wash and dry tomato, courgette and rocket. Dice tomato, thinly slice courgette and crumble feta. Cut washed lemon into wedges.
Step 2
Reserve 1 teaspoon from the measured olive oil. Whisk remaining olive oil with all sesame oil and vinegar. Toss tomato, courgette and rocket with dressing, then gently fold in feta.
Step 3
Divide into six side portions, drizzle with reserved olive oil and serve with lemon wedges.
