Sheepshead, Bread Sauce

Sheepshead, Bread Sauce Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-2608. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Verify 70°C in the sheepshead and remove bones carefully. Measure fresh bread crumbs by volume for the full sauce, then pour an actual portion over the fish; no roast-game plate or separate sauce service is imported. Limites : Edible recovery, bone removal, covering-water amount, bread absorption and sauce application remain unmeasured.

Method

Steps

  1. Step 1

Scale, remove fins and bones and wipe the 1361 g fresh sheepshead piece. Put in a saucepan with ONE sliced carrot, ONE sliced onion, HALF sliced lemon, ONE thyme sprig, ONE bay leaf, ONE clove, TWO tablespoons vinegar, ONE parsley branch, ONE teaspoon whole black pepper and ONE teaspoon salt. Add water JUST to cover, amount unspecified. Cover and slowly boil for the FORTY-FIVE-minute guide until fish centre reaches 70°C.

  2. Step 2

Make the full bread sauce ONCE: boil 240 mL milk, add HALF teaspoon salt, provisional QUARTER teaspoon cayenne,60 mL FRESH bread crumbs measured by volume and ONE teaspoon butter. Mix and gently boil SIX minutes, stirring occasionally.

  3. Step 3

Carefully lift the cooked boned fish onto a hot dish, leaving cooking aromatics in the pan. Pour an actual unmeasured portion of the SAME finished bread sauce OVER and serve promptly.
