Documentary adaptation of printed No1683; source timings are guides, with actual output and safe endpoints to be measured. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-1683. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Limites : Plain cake crumbs, food-purpose candied fruits and vanilla-flavoured candied chestnuts are selected. The pudding uses FOUR whole eggs separated once; the sauce uses TWO additional pasteurized yolk equivalents. One candied lemon-peel piece has no specified mass or size. Mould fit, cooked yield and sauce coverage are unmeasured; no physical trial is claimed.
Method
Steps
Step 1
Cut SIX candied cherries,TWO candied figs,ONE candied apricot,TWO candied pears,THREE vanilla-flavoured candied chestnuts and ONE candied lemon-peel piece into small dice; add ONE ounce candied citron and ONE ounce well-picked currants. Mix with ONE tablespoon rum,TWO tablespoons maraschino,ONE saltspoon ground cinnamon,FOUR yolks from FOUR whole eggs and THREE ounces sugar for FIVE source minutes.
Step 2
Add TWO ounces plain cake crumbs and THREE ounces flour; stir TWO source minutes. Whip the FOUR corresponding whites from SAME FOUR eggs to stiff froth and fold gently into the mixture. Lightly butter a nominal one-quart mould with the unquantified coating butter; pour in the mixture and bake for the source FORTY-minute guide until the egg-rich centre reaches74C. Unmould onto a hot dish.
Step 3
Prepare the full Sabayon ONCE. Beat the separate TWO pasteurized yolk equivalents and28g sugar for TWO source minutes. Bring120mL milk and120mL cream with SEVEN drops vanilla essence to a boil. Gradually temper into the yolks while stirring, return to gentle heat and stir for the THREE-minute guide WITHOUT boiling, reaching the documented74C sauce endpoint. Strain through clean cheesecloth.
Step 4
Measure the actual finished Sabayon and pour an unmeasured draw OVER the pudding once for prompt service. Add no maraschino to this sauce and no second parent batch. Nominal mould capacity does not establish finished pudding or sauce yield.
