Cracked Wheat

Hot cracked-wheat porridge cooked with milk and served with cold milk and sugar.

Method

Steps

  1. Step 1

Bring one pint cold water and half a pint pasteurized milk to a boil in a saucepan with half a teaspoon salt.

  2. Step 2

Measure half a pint of plain dry, unprecooked cracked-wheat wheaten grits with distinct broken grains. Stir them into the boiling liquid and cook gently for fifteen minutes as a guide, continuing until the grains are fully tender. Stir along the bottom from time to time to prevent scorching.

  3. Step 3

Pour the hot porridge into a warm deep dish. Serve with cold pasteurized milk and granulated sugar separately, keeping the serving milk refrigerated until needed.
