Adele’s Gruyere Sformato
A light savoury Gruyere ring made with folded egg whites, filled after baking with chicken giblets and sweetbreads in a delicate jus.

Step 1
Gather the ingredients: 135 g butter: 100 g for the sformato, 30 g for the stew and 5 g for the mould; 80 g plain flour; 500 ml milk; 70 g Gruyere, grated or finely diced; 4 eggs, separated; Salt; About 15 g fine dry breadcrumbs for the mould; 300 g prepared chicken giblets: about 100 g cleaned gizzards, 100 g hearts and 100 g livers, kept separate; 150 g professionally prepared lamb sweetbreads, trimmed; About 450 ml ready-to-use beef jus; A little black pepper; Hot water as needed.
Step 2
Prepare the stew first. Use giblets sold for human consumption with the gizzard contents and lining removed. Trim tough tissue, cut the gizzards into small pieces and halve the hearts, keeping the livers separate. Brown the gizzards and hearts gently in 30 g butter, season with a little salt and pepper, add the beef jus and simmer covered for about 60–90 minutes until the gizzards are tender. Add a little hot water as needed to keep a small pool of sauce.
Step 3
Trim the prepared sweetbreads of remaining membrane and cut into small pieces. Add them to the stew for its last 20–25 minutes and add the liver pieces for the last 10–15 minutes. Check all the giblets and sweetbreads reach at least 74°C. Keep the finished stew hot while the sformato bakes.
Step 4
Heat the oven to 180°C. Butter a smooth ring mould of about 1½ litres capacity with 5 g butter and coat its inside with the breadcrumbs, tapping out any excess. Melt the separate 100 g butter in a saucepan, stir in the flour and cook briefly without darkening it. Add the milk gradually, stirring continuously, and simmer for about 5 minutes until very thick and smooth. Add the Gruyere and a little salt before taking the pan off the heat.
Step 5
Let the sauce stop boiling and cool for a few minutes. Beat in the four yolks one at a time. Whip the whites to firm but supple peaks and fold them into the mixture gently in two or three additions, retaining as much air as possible. Spoon into the prepared ring mould.
Step 6
Bake for about 35–45 minutes until risen, set and golden, with the centre at least 74°C. Rest for about 5 minutes, loosen carefully and turn onto a warm serving plate. Fill the central opening with the hot giblet and sweetbread stew and its juices. Serve immediately.
