Bisque of Smelts Trouville

Bisque of Smelts Trouville Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-2856. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Keep eighteen smelts and fifteen mussels as the only whole seafood purchases. Remove all bones by stock filtration and careful filleting; retain the separate reserved meats for the final poach. Verify the existing 74°C seafood-and-egg soup route and safe cooking of the reserved garnish. Limites : Actual fillet/tail recovery, bone clearance, mussel broth, puree losses, final volume and visible garnish allocation are unmeasured; nominal 36 halves is a cutting plan.

Method

Steps

  1. Step 1

Remove heads and tails from EIGHTEEN fresh smelts, split through backs and remove spinal bones. Keep edible fillets separately. Put the SAME trimmings with the EXTRA 454 g whitefish bones, ONE sliced onion, TWO sliced leeks, TWO parsley branches, ONE thyme sprig, ONE bay leaf and TWO cloves in a saucepan. Add 1893 mL water,59 mL white wine and ONE HEAVY teaspoon salt. Slowly boil FORTY-FIVE minutes, cheesecloth-strain ALL stock solids and bones out, and keep actual broth hot.

  2. Step 2

Open FIFTEEN fresh mussels, separate edible flesh from shells and cook with the SEPARATE 237 mL water for the FIVE-minute guide until safely cooked. Add ONLY the strained recovered mussel broth to fish broth. Reserve SIX cooked mussel meats. Cut SIX half-smelt fillets into HALF-inch pieces and reserve with them.

  3. Step 3

Pound remaining NINE mussel meats and nominal THIRTY half-smelt fillets with TWO egg yolks into smooth pulp. Heat 28 g butter with 57 g flour ONE minute, stirring. Add the combined stock and briskly mix to a boil, then cook FIFTEEN minutes.

  4. Step 4

Gradually stir in seafood-yolk pulp. Add TWO saltspoons cayenne, ONE saltspoon grated nutmeg and 118 mL cream. Boil for the EIGHT-minute guide until the existing 74°C seafood-and-egg endpoint is met, then cheesecloth-strain into a tureen.

  5. Step 5

Poach the reserved smelt pieces and SIX mussel meats in the SEPARATE 59 mL white wine for the SIX-minute guide until safely cooked. Add them to the SAME tureen, mix lightly and serve.
