Biscuits Glacés à l’Orange
Orange-yolk custard foam folded with measured whipped cream and frozen in six paper boxes. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-2064. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use pasteurized yolks or verified 74°C orange base before folding cream; a modern freezer substitutes for historical salt-ice apparatus if labelled. Limites : Whipped-cream parent actual yield, paper-box capacity and frozen overrun/volume unknown.

Steps
Step 1
Whisk six yolks with sugar, chopped orange rind and juice over controlled heat for ten-minute historical guide using pasteurized yolks suitable for this use OR verifying the orange-yolk base reaches 74°C before cooling and folding in cream. Add its sugar and vanilla while whipping TWO MINUTES. Remove separated watery liquid, refrigerate promptly and measure HALF PINT FINISHED rather than infer it from raw cream. Fold that measured cream into cooled orange base gently one minute.
Step 3
Divide into six food-safe paper boxes, level. Freeze in a suitable freezer or external ice/salt bath for historical two-hour guide, verifying hard frozen and maintaining cold chain; serve on a clean liner if desired.
