Pan-Roasted Beef Steak with Potatoes
A large beef steak gently cooked with whole garlic and rosemary, with potato chunks finished in its strained pan juices.

Step 1
Gather the ingredients: 1 large bone-in beef loin steak, about 800 g and 3–4 cm thick; 40 g butter: 25 g for the beef and 15 g for the potatoes; 1 tablespoon olive oil; 1 whole garlic clove, peeled; 2 small rosemary sprigs; About 350 ml ready-to-use broth, added as needed; 600 g potatoes, peeled and cut into 2 cm chunks; Salt, to taste.
Step 2
Pat the steak dry. Heat the 25 g butter and oil in a snug heavy pan, add the steak and brown on both sides. Put the whole garlic clove and rosemary sprigs in the pan beside it, without inserting them into the meat.
Step 3
Add a few tablespoons broth, cover and cook gently for about 1–1½ hours, turning periodically and adding broth sparingly to prevent scorching. Salt about halfway through. Continue until the meat is tender and reaches at least 71°C away from bone; the exact time depends on the cut.
Step 4
Lift the beef onto a clean dish, cover and keep hot at 60°C or above. Strain the reduced juices without pressing the garlic or rosemary, discard those solids and return the juices to the pan. Add the raw potato chunks, remaining 15 g butter and enough of the broth to keep the pan moist. Cover and cook for about 20–30 minutes, turning gently, until the potatoes are tender; uncover briefly to reduce and colour them.
Step 5
Return the steak to the potatoes and heat thoroughly to 74°C. Carve and serve with the potato chunks and concentrated pan juices. Water may replace the broth in the same small additions.
Step 6
For the tomato version, replace about 100 ml of the broth used with the steak with 100 ml plain tomato juice or sieved pulp. If the juices are too scant for the potatoes, mix in 1 teaspoon plain tomato paste with a little more broth, along with the already listed potato butter. Follow the same gentle cooking, straining and potato method. These tomato ingredients belong to the alternative version.
