Pickerel with Caper Sauce

Documentary adaptation of printed No1884; not physically cooked, measured or tasted. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-1884. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Select No1246’s No701 white-broth branch and exclude No1245 alternative; safe egg-cream liaison and fish centre 70°C are modern controls; measured sauce/edible fish remain physical holds. Limites : No1246 parent has alternative No1245 liquor; this adaptation selects explicit No701 default branch once. Pickerel bone/fin yield and sauce coverage unmeasured.

Method

Steps

  1. Step 1

For No701 ONCE, place its veal bones in the five gallons COLD starting water; bring to a boil and skim. Add its whole prepared carrots, turnips, onions, parsley root, leeks and celery; cover and simmer gently about FOUR hours. Cloth-strain, cool/chill surplus promptly and MEASURE the specified FINISHED broth aliquot; five gallons is not the yield. Measure ONE PINT (about 473 mL) FINISHED No701 for No1246; its alternative No1245 mutton liquor is excluded. For No1246 ONCE, heat its 1.5 tablespoons butter with two tablespoons flour, add that measured pint broth, half teaspoon salt for this white-broth branch and one saltspoon cayenne; whisk about two minutes and reduce the WHOLE sauce by half. Add two tablespoons capers and boil two minutes. Mix one yolk with half gill cream, stir it in and heat the printed minute while verifying a safe egg endpoint. Measure FINISHED caper-sauce output; use it once over the cooked fish, not as a separate parent service.

  2. Step 2

Trim three-pound pickerel and poach covered in one quart water, half gill vinegar, salt and parsley for printed twenty-minute guide; verify fish reaches 70°C at thickest flesh. Lift and drain, pour measured finished caper sauce over once.
