Cornmeal Pones

A dense yellow cornmeal bake with milk and butter, browned in a pan and cut into six pieces.

Method

Steps

  1. Step 1

Put one pound of plain yellow cornmeal in a bowl. Pour over two gills of boiling water and mix thoroughly with a wooden spoon. Leave for about fifteen minutes, until the water has been absorbed and the mixture is no longer wet on the surface.

  2. Step 2

Beat in one whole egg, one tablespoon of butter and half a teaspoon of salt for about five minutes. Add one gill of milk and half a teaspoon of baking soda and beat again until evenly mixed. The mixture is dense; do not turn it into a thin pancake batter.

  3. Step 3

As a modern oven setting, preheat to 400°F. Lightly butter a small shallow baking tin, spread the mixture evenly in it, smooth the surface and brush the top lightly with a little extra butter.

  4. Step 4

Bake for about thirty minutes, continuing as needed until browned and set through the centre, with no wet mixture on a skewer. Cut into six equal pieces and serve hot.
