Broiled Mutton Chops
Thick mutton chops broiled, arranged in a crown and finished with a little butter and fresh watercress.
Method
Steps
Step 1
Trim and neatly flatten the six tender, thick mutton chops. Season all six with the teaspoon of salt and two saltspoons of ground white pepper. Keep a little packaged ready-to-eat watercress chilled and separate from the raw meat, handling it with clean hands and equipment according to its label.
Step 2
Lightly oil the broiler grate. Arrange the chops on it and broil for about five minutes on each side. During this same broiling phase, check the thick centre of each chop, away from bone, reaches 71°C, continuing as needed; thickness and the actual broiler determine the time.
Step 3
Arrange the cooked chops in a loose crown on a clean hot dish. Spread a very little butter over them, add the little prepared watercress and serve promptly.
