Salmon and Potato Margot
Poached salmon flaked into buttery mashed potatoes, shaped into a dome, lightly brushed with egg and baked until golden.
Method
Steps
Step 1
Use a fresh raw piece of salmon weighing one and a half pounds before its skin and bones are removed. Put it in a saucepan with enough cold drinking water to cover, one good teaspoon of salt, half a teaspoon of black pepper and three tablespoons of white-wine vinegar. Bring slowly to a boil, then continue gently as needed until the thickest fish reaches 70°C, checked away from bone with a clean thermometer.
Step 2
Take the pan off the cooking heat. Keep the fish in its poaching liquid at 60°C or above while preparing the potatoes, using suitable hot-holding equipment or gentle heat as needed. Wash and peel four good-sized potatoes and boil them in the separate two quarts of water with one teaspoon of salt for about thirty-five minutes, until completely tender.
Step 3
Drain the potatoes thoroughly on a sieve and press through a potato masher or ricer into a bowl. Add the half ounce of butter, one and a half gills of hot milk, the remaining half teaspoon of salt, three saltspoons of white pepper and one saltspoon of grated nutmeg. Mix well with a wooden spoon.
Step 4
Lift the salmon from its liquid. Remove the skin and carefully remove all bones, pull the actual recovered fish into small pieces and mix it gently but thoroughly into the hot mashed potatoes. Leave the poaching liquid out of the mixture.
Step 5
Heat a conventional oven to 200°C. Put all the hot mixture in an ovenproof baking dish suitable for this heat and large enough to hold it, shaping it into one dome. Lightly brush the surface with beaten egg, using just enough to coat it.
Step 6
Bake uncovered for about fifteen minutes as a guide, continuing as needed until the surface is golden, the egg coating is fully set and cooked and the thickest centre of the dome reaches at least 74°C. Check with a clean thermometer; browning or time alone does not establish that the centre is hot.
Step 7
Remove from the oven and serve promptly while hot.
