Risotto Piedmontaise

Italian rice with Parmesan and thin slices of cooked Swiss cervelat, made here with white veal broth and concentrated aqueous saffron extract.

Method

Steps

  1. Step 1

Measure one and a half pints of finished white veal broth and have it hot. If it was refrigerated or thawed, reheat it to a rolling boil and check that it reaches at least 165°F. Heat the oven to 350°F.

  2. Step 2

For this adaptation, use Natural Moreish concentrated saffron extract, a ready-made liquid of saffron and distilled water from the Middle East. Pass a small separate portion through a clean food-safe fine filter into a clean vessel, then measure one saltspoon of the collected liquid. Do not add water or broth. Use the measured portion promptly.

  3. Step 3

Heat half an ounce butter in an oven-safe saucepan. Add one medium finely chopped onion and cook for five minutes until golden. Add half a pound well-cleaned Italian rice and stir until the rice is golden.

  4. Step 4

Add the hot broth gradually, stirring. Add one small whole cooked ready-to-eat Swiss cervelat, selecting Volg Familienpreis Cervelas with its ready-to-eat label, one saltspoon of the freshly filtered concentrated saffron liquid, one heavy teaspoon salt and half a teaspoon white pepper. Cover, bring to the boil and put the covered saucepan in the oven for thirty minutes as a guide. Continue until the rice is tender and the mixture is hot throughout, checking at least 74°C.

  5. Step 5

Remove the sausage. Mix three tablespoons grated Parmesan and the remaining half ounce butter into the rice for two minutes. Arrange the rice on a hot dish, thinly slice the same sausage and place the slices around the rice. Serve promptly.
