Plain Broiled Lamb Chops

Plain grilled lamb rib chops seasoned with salt and white pepper, with watercress.

Method

Steps

  1. Step 1

Wash and drain the watercress and keep it separate from the raw meat. Prepare a hot grill. Trim six French-cut lamb rib chops with clean exposed bone ends and flatten them lightly. Season all around with the half teaspoon of salt and two saltspoons of white pepper.

  2. Step 2

Arrange the chops on the broiler and grill for about four minutes on each side. Continue as needed until the centre of each chop reaches 70°C and remains at or above that temperature for two minutes, checked with a food thermometer away from bone.

  3. Step 3

Transfer the chops to a clean hot serving dish, decorate with a little watercress and serve promptly.
