Fried Eggs with Sausage
Fresh pork sausage halves topped with eggs and finished in the oven.
Method
Steps
Step 1
Preheat the oven to 350°F. Use six uncooked fresh country-style pork sausage links. Split each lengthwise into two halves. Choose a broad ovenproof frying pan large enough for the twelve halves and eggs. Put the tablespoon of melted butter in the pan and fry the sausage halves for three minutes on one side, then turn them.
Step 2
Carefully crack the twelve eggs over the sausage halves. Evenly sprinkle the total half teaspoon of salt and two saltspoons of white pepper over the eggs. Fry on the stovetop for one minute, then put the pan in the oven for the first five minutes. Continue cooking as needed until the egg whites and yolks are firm and the centre of the egg and sausage preparation reaches at least 165°F, checking the sausage centres as well as the egg layer with a clean thermometer.
Step 3
Remove the pan with oven gloves and carefully slide the whole preparation onto a large hot serving dish. Serve immediately.
