Roast Pork Loin with White Beans

Garlic-studded pork loin roasted over pan juices, with cooked white beans warmed in the drippings.

Steps

  1. Step 1

    Heat the oven to an estimated hot 190°C. Season pork with salt and white pepper; make a shallow slit and insert the peeled garlic clove.

  2. Step 2

    Set pork in a roasting pan with the fat and water. Roast about one hour, turning and basting as needed, until the thickest centre reaches 71°C.

  3. Step 3

    Move pork to a clean warm dish and rest briefly. Skim excess fat from the pan juices, add cooked drained beans and heat them for about two minutes.

  4. Step 4

    Slice pork and arrange beans around it, spooning a little skimmed pan gravy over the serving.
