Matzot Fried in Egg and Milk

Milk-softened matzo sheets dipped in seasoned egg, fried golden in butter and dusted with sugar and cinnamon.

Steps

  1. Step 1

    Pour milk into a shallow tray and briefly dip each matzo sheet for 15–30 seconds per side until flexible but still intact. Drain on a rack.

  2. Step 2

    Beat eggs with the pinch of sugar and salt. Dip softened matzot carefully in the egg so both sides are coated.

  3. Step 3

    Heat half the butter in a wide pan and fry two coated sheets at a time over moderate heat, turning once, until golden and the egg coating reaches at least 74 °C. Repeat with remaining butter and matzot.

  4. Step 4

    Dust lightly with powdered sugar and cinnamon and serve warm; coffee is optional service outside the recipe.
