Broiled Beefsteaks with Bacon

Tender beefsteaks broiled over brisk heat, brushed with melted butter and topped with crisp bacon.

Method

Steps

  1. Step 1

Keep the raw beefsteaks and bacon refrigerated until needed. Use six tender, intact beefsteaks weighing five ounces each, trim neatly and flatten evenly without mechanically needling them. Mix the one tablespoon oil, one teaspoon salt and half teaspoon pepper on a plate, and turn all the steaks in the seasoning.

  2. Step 2

Arrange the steaks on a broiler and broil over brisk heat according to the appliance instructions for about six minutes on each side, continuing as needed until each thickest part reaches at least 145°F. Transfer to a hot serving dish and rest for at least three minutes.

  3. Step 3

Meanwhile arrange the six thin, crosswise-cut raw bacon slices on a clean broiler. Broil over moderate heat for about two minutes on each side, continuing until fully cooked and crisp; do not serve partially cooked bacon.

  4. Step 4

Spread a very little melted butter over the rested steaks, arrange the freshly broiled bacon over them and serve promptly.
