Coffee and Orange Almond Cake Bites

Lightly coffee-flavoured almond cake squares with orange pieces and flaked almonds. Makes sixteen small bites, two per serving.

  1. Step 1

    Allow 25 minutes preparation, 35–40 minutes baking and 40 minutes cooling. Heat the oven to 175°C conventional / 155°C fan. Line a 20 cm square metal tin, at least 5 cm deep. Use softened butter, liquid vanilla extract and egg weighed without shells.

  2. Step 2

    Dissolve 3 g instant soluble coffee in 20 ml warm milk, then mix in the remaining 40 ml milk and cool. Do not use ground coffee beans. Peel and segment the orange, removing seeds and membranes; weigh 100 g flesh, dice and blot dry. Grind 50 g almonds finely and reserve 20 g flaked almonds.

  3. Step 3

    Cream butter and sugar for 3–4 minutes. Beat in the egg gradually and add the vanilla. Mix flour, ground almonds and baking powder. Fold into the butter mixture in two additions, alternating with all the coffee milk.

  4. Step 4

    Fold 70 g orange flesh into the batter. Spread evenly in the tin, then scatter over the remaining 30 g orange and all the flaked almonds, pressing the orange lightly into the surface.

  5. Step 5

    Bake for 35–40 minutes until the centre springs back and a skewer inserted through cake beside the fruit emerges without wet batter. If needed continue in 5-minute intervals, shielding the almonds with foil if they brown early.

  6. Step 6

    Cool in the tin for 20 minutes, then lift onto a rack for a further 20 minutes. Cut into sixteen equal squares and serve two per person.
