Broiled Devilled Pig’s Feet

Cooked pig’s feet coated with mustard butter and breadcrumbs, then broiled until golden.

Method

Steps

  1. Step 1

Soften the half ounce butter and mix thoroughly with two saltspoons English mustard powder, one teaspoon white-wine vinegar, one teaspoon Worcestershire sauce, one saltspoon salt, half a saltspoon cayenne and one commercially pasteurized egg-yolk equivalent. Keep this complete devilled butter refrigerated at 40°F or colder until needed.

  2. Step 2

Use three chilled fully cooked ready-to-eat pig’s feet from a regulated food supplier. Split each into two lengthwise. Season with half a teaspoon salt and one saltspoon white pepper. Spread all the devilled butter over both sides and roll in fresh breadcrumbs.

  3. Step 3

Arrange on a double broiler and broil for about five minutes on each side until golden, continuing until the thick centres reach 74°C away from bone and the breadcrumbs are fully cooked. Arrange on a hot dish and serve promptly.
