Lobster Salad Taft

Cold lobster and hard-boiled eggs with celery, green pepper, spiced dressing and mayonnaise.

Method

Steps

  1. Step 1

For the salad dressing, finely chop the one teaspoon parsley, half a teaspoon chive, two peeled medium shallots, quarter of a small garlic clove and coloured rind from the quarter lemon. Mash with the one level teaspoon Oriental curry powder, half a teaspoon prepared Dijon mustard, one light saltspoon English mustard powder, one light saltspoon cayenne, four teaspoons salt for the dressing and one light teaspoon finely ground white pepper. Work in the initial one tablespoon cool olive oil until nearly a pulp, then gradually mix in the initial four tablespoons white-wine vinegar.

  2. Step 2

Transfer to a graduated vessel. Add further cool olive oil and white-wine vinegar in a two-to-one volume ratio until the mixture reaches one actual quart in total. Mix thoroughly, press through a clean strainer into a clean covered jar and refrigerate at 40°F or colder. Shake briskly before measuring the dressing.

  3. Step 3

For the mayonnaise, whisk the one commercially pasteurized egg-yolk equivalent in a clean cold bowl with the one tablespoon vinegar, one saltspoon English mustard powder, two saltspoons salt and one saltspoon cayenne for two minutes. Add the three-quarter gill cool olive oil drop by drop while whisking continuously.

  4. Step 4

After all the oil is incorporated, continue whisking for four minutes. Add the strained juice from the quarter lemon and mix for one minute more. Put in a clean covered bowl and refrigerate at 40°F or colder until serving.

  5. Step 5

Have a professional seafood supplier humanely dispatch two whole raw lobsters weighing two pounds each immediately before purchase. Keep chilled until cooking and cook promptly. Bring one gallon water with one tablespoon salt to a boil, add both lobsters and boil for about twenty minutes until their thickest tail and claw meat reaches 74°C. Lift with clean utensils. When safe to handle, crack the tails and claws and pick out all their actual meat, checking carefully for shell. Cut into small equal squares, spread shallowly, cool rapidly over external ice and refrigerate at 40°F or colder within two hours.

  6. Step 6

Hard-boil the three commercially pasteurized shell eggs in fresh water until both whites and yolks are firm. Cool promptly in fresh ice water, peel with clean hands and cut into small squares. Refrigerate until assembly.

  7. Step 7

Finely chop the separate two small peeled shallots and half a seeded green pepper. Cut the one well-pared white celery stalk into small squares. Mix all the cold lobster meat and eggs with these vegetables, separate half teaspoon chopped parsley and separate half teaspoon chopped chives.

  8. Step 8

Shake the cold spiced dressing and measure four ordinary tablespoons of the actual finished dressing over the salad. Mix gently and thoroughly, cover with all the actual finished mayonnaise and keep refrigerated at 40°F or colder. Just before serving, mix the mayonnaise through briskly and serve promptly; keep any unused dressing cold separately.
