Irish Jam-Topped Batter Cakes
Small airy pan-fried four-egg cakes spread with jam while hot.

Step 1
Beat yolks with salt, melted butter and milk; sift in flour until smooth. Beat whites stiff and fold gently into batter.
Step 2
Lightly butter a skillet and spoon twelve small rounds in batches. Fry over moderate heat to gold on both sides, checking a thick representative centre reaches 74 °C.
Step 3
Spread a little jam over each hot cake and serve promptly.
