Halibut Steaks with Brown Butter
Halibut steaks lightly floured, pan-fried and oven-finished, with butter and a browned vinegar pan sauce.
Method
Steps
Step 1
Preheat the oven to 350°F (177°C). Use three steaks from a small halibut, each weighing three-quarters of a pound. Season with the teaspoon of salt and half teaspoon of pepper, lightly moisten with a little cold milk and roll in flour to coat lightly.
Step 2
Heat the measured one and a half teaspoons of melted butter in a wide ovenproof frying pan large enough to hold all three steaks in one layer. Add the steaks and fry for about five minutes on each side. Transfer the pan to the oven for about six minutes, continuing as needed until the thickest centres reach 70°C and remain at or above that temperature for two minutes, checked away from bone with a food thermometer.
Step 3
Transfer the steaks to a clean hot serving dish. Divide the separate half tablespoon of butter over them. Pour the tablespoon of vinegar into the same fish pan, add the separate very little butter and heat, tossing, until a nice brown colour develops. Pour all the pan sauce over the steaks and serve promptly.
