Rice Fritters with Powdered Sugar

Small hot fritters of cooked rice, eggs and baking powder, served with powdered sugar and optional cooked fruit.

  1. Step 1

    Mix cooked rice with beaten eggs. Sift flour with baking powder and salt; fold it in with sugar to make a thick spoonable batter.

  2. Step 2

    Put about 1 kg lard in a narrow 18 cm heavy pot, verifying roughly 4 cm liquid depth and keeping the pot less than half full. Heat to about 175 °C without smoking. Add small tablespoon portions without crowding and fry, turning, until golden and the egg-rich centres reach 74 °C; drain on a rack.

  3. Step 3

    Dust hot fritters with powdered sugar. Offer cooked fruit separately if desired.
