Fried Eggs with Sweet Peppers
Whole eggs cooked over butter-fried sweet pepper halves and finished in the oven.
Method
Steps
Step 1
Split six sweet red peppers in half lengthwise. Heat two tablespoons of melted butter in a large oven-safe pan, add the halves and fry for about two minutes on one side only. Turn them over.
Step 2
Carefully crack twelve commercially pasteurized shell eggs over the peppers. Divide half a teaspoon of salt and two saltspoons of white pepper over the whole pan. If using several pans, share all the measured ingredients between them.
Step 3
Cook on the stove for about one minute, then finish in the oven for about five minutes, continuing as needed until the whites are set and the peppers are tender. Use pasteurized shell eggs for a soft-yolk finish, or cook until the yolks are firm. Carefully slide onto a large hot serving dish and serve immediately.
