Indian Rice Cakes

Small rice-flour griddle cakes with curry powder mixed into the batter, served with maple syrup separately.

Method

Steps

  1. Step 1

Sift a quarter pound of fine white rice flour into a clean bowl. Add two whole eggs, half an ounce of powdered sugar, a quarter ounce of baking powder, one saltspoon of salt, half a saltspoon of grated nutmeg and half a pint of cold milk.

  2. Step 2

Whisk until well mixed and thickened, adding half a teaspoon of curry powder while beating the same batter.

  3. Step 3

Lightly grease a large frying pan with a little melted rendered food-purpose lard and heat it thoroughly. Ladle the batter into rounds about two and a half inches across, four at a time without crowding.

  4. Step 4

Cook for about one and a half minutes on each side as a guide, continuing as needed until each cake is set through and its thickest centre reaches 74°C.

  5. Step 5

Transfer to a clean warm dish. Repeat with all the remaining batter, lightly greasing the pan as required, and serve maple syrup separately.
