Darioles Vanilla

Vanilla custards baked in delicate pastry linings, unmoulded and served warm with a little fine sugar.

Method

Steps

  1. Step 1

Heat a conventional oven to 180°C. Choose six small oven-safe metal pudding moulds that can be lined exceedingly thinly from the measured quarter-pound portion of prepared folded butter pie paste and together hold all the strained filling evenly with a little headroom.

  2. Step 2

Keep the prepared raw pastry cold until needed. Lightly flour the table, roll out the quarter pound exceedingly thin and line the insides of the six moulds. Put a little bit of butter at the bottom inside each pastry lining. Keep the lined moulds cool while mixing the filling.

  3. Step 3

Crack the two eggs into a bowl. Add the one and a half ounces fine white sugar, one and a half ounces flour, half a teaspoon McCormick Culinary Pure Vanilla Extract and three gills pasteurized whole milk. Whisk sharply for two minutes.

  4. Step 4

Strain the mixture through clean food-purpose cheesecloth into the lined moulds, dividing the actual strained filling evenly between all six. Place the moulds on a dry baking tray.

  5. Step 5

Bake for about thirty minutes as a guide, continuing as needed until the pastry is baked through and lightly golden, the custards are set, and the centre of each reaches at least 74°C.

  6. Step 6

Remove from the oven. As soon as they can be handled safely, unmould onto a dish lined with a clean folded serving napkin. Sprinkle a little fine white sugar over the darioles and serve warm.
