Shirred Eggs, Kandy
Eggs baked over curried onions in individual dishes, each ringed with fried banana strips.
Method
Steps
Step 1
Peel and finely slice the two medium white onions. Use six individual egg dishes suitable for both stovetop and oven. Put one level teaspoon of butter in each dish and heat on the stovetop. Divide the sliced onions evenly among the six dishes and brown for about five minutes, turning occasionally with a fork. Divide the single teaspoon of curry powder evenly among all six dishes and mix gently.
Step 2
Heat the oven to 400°F. Carefully crack two eggs into each dish. Divide the single teaspoon of salt and the one-third teaspoon of white pepper evenly among the six dishes. Bake for about three minutes as an initial guide, continuing as necessary until the whites and yolks are firm and the eggs reach 160°F. Keep the cooked dishes hot at 140°F or above while finishing the bananas.
Step 3
Peel the three ripe bananas and cut each into four strips lengthwise, making twelve strips. Lightly roll them in flour. Heat enough separate butter for frying in a frying pan and fry the strips for about one minute in total, turning, until golden. Lift out and drain on a clean cloth. Arrange two strips around the sides of each egg dish in a ring and serve immediately.
