French Apple Fritters with Orange Flower and Wine Sauce

Sugar-and-lemon apple slices in an egg batter scented with orange-flower water, fried golden.

Steps

  1. Step 1

    For the proposed egg batter, whisk flour, baking powder and salt, then beat in eggs and milk until thick enough to cling to a piece. Rest 10 minutes; stir once before dipping and frying.

  2. Step 2

    For the proposed wine sauce, simmer wine and sugar uncovered for 8–10 minutes until reduced by roughly one-third and lightly syrupy; remove from heat and whisk in butter and lemon. Serve a little warm sauce alongside the dessert.

  3. Step 3

    Sprinkle peeled apple slices with first sugar and lemon. Sweeten proposed egg batter with 20 g sugar and orange-flower water.

  4. Step 4

    Dip each apple slice in batter, then fry in hot lard at about 175 °C until golden and apple tender; drain well.

  5. Step 5

    Serve hot apple fritters with the proposed wine sauce on the side.
