Broiled Venison Steaks with Currant Jelly
Small venison-leg steaks broiled with a light oil seasoning and served with currant jelly separately.
Method
Steps
Step 1
Obtain six small raw venison-leg steaks, each weighing four ounces. Neatly flatten them with the flat side of a meat cleaver.
Step 2
Mix one tablespoon of olive oil, one teaspoon of salt and half a teaspoon of white pepper on a plate. Turn the steaks repeatedly through this seasoning.
Step 3
Prepare a broiler according to its operating instructions. Arrange the steaks on the broiler and broil for about four minutes on each side, continuing as needed until a food thermometer in the thickest centre of each steak reads at least 160°F.
Step 4
Arrange on a hot dish and serve the ready-to-eat red currant jelly separately.
