Broiled Mutton Kidneys on Toast

Butterflied mutton kidneys broiled and served on toast with melted butter.

Method

Steps

  1. Step 1

Use twelve very fresh mutton kidneys from mature sheep. Keep refrigerated until needed. Split each open without separating its two halves and remove all the skin. Mix the tablespoon of olive oil, teaspoon of salt and half teaspoon of white pepper on a plate, then repeatedly turn the opened kidneys in this seasoning.

  2. Step 2

Arrange the kidneys on a clean double broiler and broil over brisk charcoal heat for about three minutes on each side. Continue as needed until the thickest centres reach at least 70°C for two minutes, checked with a clean thermometer.

  3. Step 3

While they cook, freshly toast the six pieces of plain white bread. Melt a little butter separately. Put the six hot toasts on a hot serving dish, distribute all twelve cooked kidneys over them and lightly baste with the melted butter. Serve hot immediately.
