Filet of Beef Lyonnaise
Whole roast beef fillet with chestnuts and small white onions in a demi-glace, tomato and sherry sauce.
Method
Steps
Step 1
Preheat a conventional oven to 200°C. Keep the raw beef refrigerated until preparing it and use clean equipment separate from ready-to-eat food. Slit both sides of the twelve large, sound, raw Italian chestnuts, plunge them into boiling drinking water for about five minutes, then drain. Remove both shells and inner skins with a clean towel while they are still warm. Keep the actual twelve chestnuts for the roast.
Step 2
Peel the twelve very small white onions. Heat the tablespoon of rendered pork lard in a frying pan and fry the whole onions until lightly browned.
Step 3
Place the one whole two-and-a-half-pound raw beef fillet in a small roasting pan. Season with the teaspoon of salt and half teaspoon of ground white pepper. Pour the half tablespoon of melted butter over its surface and add the two tablespoons of cold water to the pan. Roast uncovered for about fifteen minutes as an initial guide.
Step 4
Measure one gill of finished demi-glace before loosening it with a little hot finished stock from the linked White Broth, made with veal and aromatics without the optional beef or poultry additions. If refrigerated or thawed, bring this loosened portion to a full rolling boil, stirring, and check that it reaches at least 74°C. Have the separate one gill of finished tomato sauce hot; reheat it thoroughly if it was chilled.
Step 5
Move the roasting pan to a safe heatproof surface. Add all the prepared chestnuts and onions, the loosened demi-glace, the tomato sauce and half gill of sherry. Return to the oven uncovered for about twenty minutes, then roast for another five minutes. These stage times are guides: continue as needed until the centre of the beef reaches 71°C and the onions and chestnuts are tender, monitoring the pan so the sauce does not catch.
Step 6
Transfer the whole fillet to a hot serving dish. Pour all of the actual pan sauce and garnishing around it and serve promptly.
